I am in South OC, where are some good circuits for practicing on my own? I know that people practice at Fairview Park but I am not sure the circuit they use.

You can usually come up with your own circuit at any grass park. Weave through some trees with tight off camber turns, find spots where you need to dismount, or just dismount for practice, find a hill to run up, etc.

I do some short circuits through part of whiting ranch and out on the street. There's also a grass park nearby with a sand volleyball court that I ride through to practice.
